The Food Standards Agency (FSA) in the UK has established guidelines to help food businesses manage and communicate allergen information effectively. Businesses in the UK that use Edible’s menu builder will (by default) create menus modeled on this guidance.
UK 14 allergens
Food businesses must provide information on 14 specified allergens if they are used as ingredients in their food products. These allergens are:
- Celery
- Cereals containing gluten (specification required)
- Wheat
- Barley
- Rye
- Spelt
- Oats
- Kamut
- Crustaceans
- Eggs
- Fish
- Lupin
- Milk
- Molluscs
- Mustard
- Tree nuts (specification required)
- Almonds
- Brazil nuts
- Cashews
- Hazelnuts
- Macadamia nuts
- Pecans
- Pine nuts
- Pistachios
- Walnuts
- Peanuts
- Sesame seeds
- Soybeans
- Sulphur dioxide and sulphites (if above 10mg/kg or 10mg/litre)
